The mother of all cookbooks, the scope of the information contained in this encyclopedic kitchen reference is mind boggling. I even played a game of "stump the cookbook" and there weren't any culinary questions or ingredients I came up with that weren't covered. Truly, this is the one cookbook to have, if you're only having one (those living in small spaces - efficiency apartments, RV's, etc. take note). Cooks have relied on The Joy of Cooking to guide them through the mysteries of the kitchen for over sixty five years, but this new version, updated for the first time since 1941, reflects the way we eat today by highlighting freshness, convenience and health. Don't worry, in addition to chapters on healthy grains and soy foods, you'll still find all the classic favorites like Beef Wellington or Macaroni and Cheese. Of course there are recipes - way more than you'll ever be able to cook, and spanning the globe of ethnic cuisines as well as American favorites. The recipes cover a wide range -- you'll find six different kinds of cheesecake alone. But more than formulas, this is a cooking school in a book. You'll find comprehensive and thorough information about cooking tools, ingredients, and techniques. Line drawings give further clarification to the easy to understand text. The all-new "Rules" sections included in many chapters teach essential cooking basics at a glance. Among other features, you'll find microwave instructions for preparing beans, grains and vegetables; dozens of recipes for those who are lactose intolerant or allergic to gluten; low fat substitution ideas; expanded ingredient charts highlighting calories, essential vitamins, and levels of fat and cholesterol. Again, I can't emphasize the SCOPE of this book enough.
