James Beard Award winning author Steven Raichlin's, well known for his terrific books High Flavor, Low Fat Cooking and High Flavor Low Fat Vegetarian Cooking, continues his series by turning his attention South of the Border.

For many people, Mexican food means fat laden dishes, dripping with cheeses and packed with hearty pork or beef. The typical chili rellenos dish contains as much fat as 27 slices of bacon!

Luckily, Mexican cuisine doesn't have to be unhealthy to still be tasty.
