Cohen's almost encyclopedic reference on healthy kosher cooking is a gorgeous, heavy, well produced, almost encyclopedic volume that would make a wonderful gift (although you'll want one for yourself too). Hardcover, beautifully bound, and filled with full color photography throughout that will tempt you to actually start cooking the delicious recipes inside, this elegant book will undoubtedly end up getting passed on from generation to generation of family cooks. Introductory chapters acquaint readers with the Enlitened Living lifestyle, and help with stocking the kitchen and pantry in preparation for cooking the recipes that follow (don't worry, for the most part, nothing unusual or exotic is needed for the recipes). The 250 recipes in the book are perfect for everyone and every occasion, from daily suppers to holiday celebrations and Sabbath and Festival meals. All recipes are either low or reduced carb and/or low or reduced fat (more often than not, recipes are both low carb and low fat!). Of course nutritional breakdowns and diabetic exchanges are included. Cohen stresses healthy foods like whole grains, lean proteins, healthy oils and soy products when creating these mouth watering recipes. On the table, no one will ever suspect the food is "healthy" (unless you tell them). Enlitened Kosher Cooking book will benefit anyone, Jewish or not, who is trying to maintain a healthy diet and/or is diabetic. If you are keeping kosher at the same time, I dare say this book is a must for your kitchen library.
