Truss

The technique of tying poultry so it's ready to be roasted. You can truss the entire bird, or stop at the portion where the legs are tied together. Use cooking twine and follow the photos below to truss your poultry. This process works equally well for chickens, turkey or even Cornish Game Hens.

Start by making a slip not in the center of a long piece of twine. Slip this over the little "knob" on the back of the bird. Bross the twine under the legs and tie them together. Follow the photos if you want to truss the bird further. Snip the twine close to the know when finished.
