Tofu

A white curd made from cooked soybeans, Tofu is very high in protein. Regular tofu comes in water packed tubs in the refrigerated section of the grocery store. The water should be changed daily until it is used. Silken tofu comes vacuum packed in boxes and needs no refrigeration (or maintenance) till opened. Tofu comes in varying degrees of firmness which are listed on the box. While it has little flavor on its own, tofu is like a sponge for absorbing the flavors of foods cooked with it. It can also be marinated. Tofu can also be frozen, which will change it's consistency to be chewy and sponge-like. This can be very useful in certain dishes. Tofu is often used as a meat substitute in vegetarian cooking and it is an extremely versatile ingredient.
