Sake

Pronounced sah-kay. Japanese rice wine. Most sakes are dry, with the exception of mirin, which is a sweet sake used mostly for cooking. If a recipe uses mirin, it will be listed as such. Otherwise if a recipe calls for sake, assume it is dry sake.
