Saffron

A seasoning derived from the crocus flower, saffron lends a distinct yellow color to a dish as well as distinctive flavor. This spice is extremely expensive (it retails for about $2000 dollars a pound!), but luckily, a little goes a long way. One quarter teaspoon is enough to flavor a cup of rice. If you've ever eaten the traditional Spanish dish paella, you've had saffron.
