Rice Vinegar

Rice vinegar, made from fermented rice, is generally milder than most Western vinegars. It can be found in most supermarkets as well as Asian grocery stores.

Japanese rice vinegar is very pale in color and the type most frequently used. If a recipe doesn't specify a specific type of rice vinegar, you're pretty safe using this type.

Chinese rice vinegar comes in three versions: red, white and black. Red Chinese vinegar is mainly used to accompany seafood. White, which is actually clear to pale gold in color, is mainly used in sweet and sour dishes. Black Chinese vinegar is typically used as a table condiment.
