Rhubarb

A member of the buckwheat family, rhubarb grows in thick, celery-like stalks. While it is technically a vegetable, rhubard is most often used as a fruit. It is a extemely tart, and therefore must be sweetened.

Strawberries are frequently mixed with rhubarb, as in the classic dessert Strawberry Rhubarb Pie.

Store refrigerated, wrapped in plastic, for up to 3 days.

 

IMPORTANT: The stalks are the only edible part of the rhubarb plant. The leaves contain Oxalic Acid and can be toxic.
