When buying fresh onions, look for a firm vegetable as soft spots are
a dead gave away for old onions. If roots are still attached to the onion,
they should be white and firm, not withered. The longer a cut onion is
exposed to air, the stronger the irritants to your eyes will become. Chop
onions quickly, right before using and immediately add them to what you're
cooking.
