A non-heading member of the cabbage family characterized by loose,
frilly leaves and a mild cabbage-like flavor. The most commonly used
Kale is deep green in color with shades of blue or purple. Choose kale
that has a deep, vibrant color, and crisp leaves. Opt for smaller bunches
over larger. Refrigerate, but use within 3 days as the flavor will increase
in strength.
Remove the tough inner stalk before using kale.
Exquisite ornamental kale in gorgeous hues of purples and greens are
also favorites of landscape artists.
