Kale

A non-heading member of the cabbage family characterized by loose, frilly leaves and a mild cabbage-like flavor. The most commonly used Kale is deep green in color with shades of blue or purple. Choose kale that has a deep, vibrant color, and crisp leaves. Opt for smaller bunches over larger. Refrigerate, but use within 3 days as the flavor will increase in strength.

Remove the tough inner stalk before using kale.
