Horseradish

A coarse plant with spiky leaves, native to eastern Europe, now grown in the United States. While the leaves can be used in salads, horseradish is most often used for its roots, which are grated as a condiment.

When buying fresh horseradish, looks for firm roots that are free of blemishes. Peel before using, as you would a potato. Store in the refrigerator in a plastic bag.

Prepared horseradish is available in white (vinegar preserved), or red (beet juice preserved) varieties. In recipes, which call for prepared horseradish, use white unless otherwise noted.
