Honey

A thick sweet syrup made by bees from flower nectar. The honey's color and flavor comes from the type of flower from which the bee extracted the nectar. Generally speaking, the darker the honey, the stronger the flavor. Choose accordingly, depending on what the honey will be used for.

Honey is generally available in one of three forms: liquid, chunk style and comb. Liquid honey, the type most cooks will most frequently use, has been extracted from the waxy comb and has often (but always) been pasteurized in order to prevent crystallization. Chunk honey has some pieces of comb included in the jar and comb honey includes a large piece of honey filled comb.

Store honey in a tightly sealed jar in a cool, dry place. It will easily keep for up to a year. When refrigerated, and sometimes even when it is properly stored, honey will start to crystallize. Don't be alarmed it is still perfectly good and can be brought back to its former state by microwaving it on high for about 25-30 seconds or by placing the uncovered jar of honey in a pan of hot water over very low heat for about 10-15 minutes.
