Ginger

A root plant used in many ethnic cuisines as well as many desserts. Ginger comes fresh or dried or pickled. When buying fresh ginger, look for a firm, unwrinkled root. You can use a simple kitchen grater to grate your fresh ginger. Ginger can be stored at room temperature for up to a week or two or place it in a heavy paper bag in the refrigerator for up to six weeks.

Unless otherwise stated, when a recipe calls for ginger, assume it means the ground dried ginger.
