A green vegetable (actually a fern) which resembles, you got it, fiddleheads. They have a very short growing season and are likewise, hard to find. Fiddleheads are, however, worth the effort as they are crunchy and delicious. Fiddleheads are available frozen (although once again, they are not that easy to find). This versatile green which is used in soups, salads and as a side dish, is a staple of Canada's maritime cuisine.
