When recipes call for heavy or whipping cream either can be used and both
can easily be whipped. For your information, whipping cream contains 30-36%
butterfat and heavy cream contains 36-40% butterfat (if you ever get the
question on a TV quiz show, you're now prepared). Some recipe will also
call for Half and Half, which is half cream and half milk.
