Season: summer. When buying fresh corn, freshness is of the utmost importance. Corn starts converting its sugar into starch as soon as it is harvested. If you've ever had fresh sweet corn picked straight from the garden, you can appreciate what we're talking about here. Many of today's hybrid corns have been designed to minimize this effect, but you still can't go wrong with fresh. Check the stems for the freshest looking cuts. The kernels of corn should look shiny. If you can't use the corn right away, peel it and store it in a plastic bag in the refrigerator.
