Season: Early spring, fall and late winter. When buying fresh broccoli
look for tightly bunched up flower heads, firm vegetables and a bright
green color. If there is a yellow in the buds, this is a sign of age and/or
poor quality. Before cooking larger heads of broccoli, be sure to pick
off the leaves on the outer stems and use a vegetable peeler or small
knife to pare off the tough outer skin from the large stalk (not necessary
with smaller stalks of broccoli). |
