Arugula

(Also known as Rocket, Roquette, Rugula, Rucola)
A leafy green with a distinct peppery taste. A common ingredient in mesclun, arugula can add interesting flavor to many dishes. Popular in Italian cuisine, Argula seems to be gaining in poluarity in the U.S. as well.

Available in well stocked produce markets and health food markets, arugula doesn't keep for more than a few days in the refrigerator, so use quickly. As the leaves can hold grit, be sure to wash thoroughly before using.
