A salty canned fish, usually packed in oil. Anchovies have a strong taste,
but you can rinse them, thereby reducing the salt and fat content (since
you are also rinsing away oil). Unopened canned anchovies will keep at
room temperature for about two years. Once opened, cover with oil and
refrigerate in an airtight container for about two months. Anchovies are
a staple in Mediterranean cooking and it's always important to keep in
mind that a small amount can go a long way.
