Take off leaves and wash. Place upside down whole on a paper towel on a plate. Put into the refrigerator. They will last for several days like this.

Any time when you have to much soft fruit like strawberries and dont know what to do with them,liquify them with a little sugar and freeze. Use as a sorbet or compote with desserts like chocolate cake.

For strawberries and cream, the best way to present the strawberries is to cut off the top and stalk, then quarter them from top to bottom (customers at my hotel find them most pleasing presented in this way). For the cream and a dash of brandy, some caster sugar and a little cinnamon and whip until stiff.

Put ordinary drinking straws to good use. To hull strawberries, use a sturdy plastic straw. Push it up through the bottom of the strawberry and through the top. It does a great job quickly and neatly. The berries look excellent if you want to leave them whole.

Place the berries in cool, well ventilated containers (32 to 40 F / 0 to 5 C). The moisture content of fresh strawberries is high, so store uncovered or loosely covered.
