When cooking fish stock, add a tablespoon of vinegar mixed with lime juice to your broth. It cuts the fishy smell and adds lots of flavour to your finished product.

Living alone, instead of buying large jars of apple juice or applesauce for one or two recipes, I buy from the baby food section and don't have leftovers which I probably won't use.

Age your beef by placing in non-reactive container. Leave uncovered in ref. for 6-8 days. After aging bring to room temp and season. Rub oil over all surface. This will seal the meat. Bake at 225-250 until done. This will tenderize the toughest meat.

Store whole fresh ginger root in a plastic bag in the freezer. Grate as much as you need for a recipe. It grates just fine when frozen!

Take a fresh head of lettuce, hit the bottom to remove the core (do not use a knife as this will make the lettuce turn brown), place the whole head in a plastic zip type bag with a piece of paper towel. Store in vegetable bin in refrigerator. You'll find the lettuce will last and last. I've had some that remained crisp and clean for over five weeks!

If you use only a part of a block of cheese, before returning it to the refrigerator, moisten
a piece of paper towel with vinegar and wrap across the exposed section. This keeps mold from
growing.
