Tips: Leftovers Tips

  • Make a delicious dip out of leftover chilli by spreading a package of softened cream cheese in the bottom of a deep pie plate. Top with 2 cups of leftover chilli and 1 cup of salsa. Sprinkle two cups of shredded chedder cheese on top and bake in a 350 degree over for 30 minutes. Serve with crisp tortilla chips for dipping. Judi Fonda, NY new (Added: 1-Apr-2004)
  • Freeze left-over coffee in cubes. When you want a cup of coffee, heat a few cubes in a cup in the microwave. Especially like to do this with flavored coffees. Doris, Decatur, IL new (Added: 1-Jan-2004)
  • Instead of dried breadcrumbs in meatballs and meatloaf, remove the crust from soak 2 slices of whole wheat bread and soak in 2/3 cup buttermilk for 10 minutes. Squeeze out excess milk and add to meat. Mighty moist! nancy, new york new (Added: 10-Mar-2005)

  • Leftover Meatloaf makes a great meat for Tacos. Just add taco spices mixed with water (follow the packet's instructions) and reheat in a pan. Marsha, Washington DC new (Added: 13-Feb-2006)
  • Freeze ground meat in 1 pound portions and place into freezer storage bags. Flatten out to the edges of the bag and remove all the air before zipping and sealing, then freezing. These flat bags of ground meats stack neatly laid flat or standing on edge in the freezer. If you want a smaller amount it’s easy just to break it off then reseal the bag.   • I buy ground beef in bulk and prepare for several meals in advance. I cook 5 or 6 lbs at a time and drain. I add taco seasoning, sloppy joe sauce, and leave some plain and freeze in vacuum sealer bags. I also add seasoning to the ground beef before I shape into patties and freeze.
