Author Notes

The basic flavoors, sugar and vinegar, give this sauce a sweet and sour tang, while beer provides flavor and moisture.

Ingredients

1 medium onion, minced
3 garlic cloves, minced
2 chipotle chiles, reconstitutedif dried or rinsed if canned, finely chopped
1 cup cider vinegar
1/2 cup sugar
3 cups beer
1 cup white wine
2 tablespoons minced cilantro

Instructions

Makes Enough for 4 Strips of Ribs or 1 brisket

Combine all the ingredients in a saucepan and simmer gently for about 10 minutes to dissolve the sugar and coo kthe alcohol off the wine and beer.  Use the mixture to brush on barbecuing ribs and brisket.
