Author Notes: This recipe makes a wonderful salad for Thanksgiving, or any time you want to make the salad course special.


Ocean Spray markets a brand of sweetened dried cranberries called "Craisins" which are available in most grocery stores.

Ingredients: 6 ounces package of salad spinach
1/2 cup sweetened dried cranberries
4 thin slices of red onion

Dressing:
4 slices bacon or turkey bacon, cooked crisp and crumbled
1/2 cup plain or orange-flavored honey
1/2 cup lime juice
2 tablespoons Dijon mustard
Instructions:

Wash and clean spinach. Divide evenly among 4 salad plates. Top each with 2 tablespoons sweetened dried cranberries and onion slices.

Dressing -- Makes 1 Cup

Combine dressing ingredients in a small glass mixing bowl using a wire whisk. Heat in the microwave on HIGH for 1 minute or until warm. Pour over salad and toss.
