This spinach egg salad recipe is perfect for a quick, healthy and simple summer supper.

Ingredients

  • 1 pound fresh spinach
  • 1/2 cup salad oil
  • 1/4 cup sugar
  • 2 tablespoon vinegar
  • 1 teaspoon grated onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 6 slices bacon, cooked and crumbled
  • 3 hard cooked eggs, chopped
  • 1 hard cooked egg, sliced

Directions

  1. Wash spinach thoroughly in lukewarm water, drain and spin dry. Chill to crisp
  2. Combine oil, sugar, vinegar, onion, salt and mustard. Beat or blend in a blender until dressing becomes thick and syrupy and sugar is thoroughly dissolved
  3. Tear spinach into bite-sized pieces into a large salad bowl. Add bacon and chopped eggs
  4. Pour dressing over all; let stand about 1/2 hour. Toss to thoroughly mix salad.
  5. Garnish with egg slices
  6. *Note: Dressing may be prepared ahead and chilled
