Garden Gazpacho  

Note from Cheri:
Gazpacho, a cold Mexican soup, makes a refreshing and healthy addition to summer lunches. I particularly love to serve it at picnics.

4 oz. tomato juice
2 cucumbers, peeled and seeded
2 green bell peppers
2 medium carrots
5 stalks celery
4 stalks scallions or green onoins
1/4 cup extra virgin olive oil
2-3 T hot sauce (or use hot sauce to taste)

Place all ingredients in a food processor and process until coarsely chopped.
