Spanish Style Green Beans

Making vegetables interesting is always a challenge to me. Green beans get lots of help in this recipe that makes a wonderful side dish for meats, chicken or even fish.

1 lb. fresh green beans
1/2 cup green bell pepper, chopped
1/2 cup onion, chopped
1 T olive oil
1 large tomato, peeled and chopped
1/2 tsp. dried basil
1/4 tsp. dried rosemary
salt & pepper to taste

Serves 6

Wash beans, trim ends, remove strings and cut into 2" pieces. Cook in a small amount of water or steam until crisp-tender, about 8-10 minutes. Drain and set aside. Sauté onion and pepper in oil until tender, then add remaining ingredients, including beans. Mix well and cook just until heated.
