Grilled Herbed Mushroom Packets

These mushrooms, cooked in small foil packets can be made in an oven or over hot coals at a barbecue, making them a perfect side dish for camping trips.

1 lb. fresh mushrooms, sliced
1 tsp. lemon juice
6 green onions, chopped
1 tsp. chopped fresh parsley
1/2 tsp. dried thyme
1/2 tsp. marjoram
1/2 tsp. crushed red pepper (optional for those who like a little spice)
1/4 cup melted butter
salt and pepper to taste

Serves 4

Toss mushrooms and lemon juice in a medium bowl to coat. Add remaining ingredients and mix well. Divide mixture into quarters and place each portion on a medium sheet of aluminum foil. Fold into packet, following instructions included with our "Packet Meals" recipe. Grill over medium-hot coals for 10-12 minutes or bake in a 400 F oven for 12-15 minutes.
