Fried Coyote Squash

Author Notes: This recipe is part of an article April did for us about incorporating new and exotic vegetables and fruit into your low carb diet in order to resist boredom.

Ingredients: 1 coyote squash
3 tablespoons wheat protein isolate or low-carb bake mix
1 tablespoon butter
olive oil
Instructions:

Cut open the squash and remove the soft seed (which can be eaten raw). Peel off the outer skin and slice into thin medallions. Heat olive oil and 1 tablespoon of butter in large fry pan. Shake medallions in bake mix until well coated and place in single layer in hot oil. fry until brown on both sides. Drain on paper towel. Salt and pepper lightly. Serve hot.
