Fresh Corn with Onions & Jalapeños

One of the greatest things about summer has got to be fresh corn. For the best flavor, get your corn as freshly picked as possible as it starts to lose sweetness the minute it leaves the stalk.

Here, fresh corn (use frozen of it's winter and you can't get fresh) gets dressed up with red onion and spicy jalapeño peppers. This recipe is a wonderful side dish for a Southwestern style meal.

6 ears of white sweet corn, shucked and cut off the cob
3 fresh jalapeño peppers, seeded and minced
1/2 red onion, diced
1 green bell pepper, diced
1 red or orange bell pepper, diced
2 T butter
2 T olive oil
1/4 C water
salt and pepper to taste

Serves 6-8

Combine all ingredients in a alrge, heavy saucepan. Cook over medium heat for 5-10 minutes, stirring occasionally. Cooking time will depend on how crisp you like your vegetables.
