The Bailey House Sweet Potato Souffle

Of course, this would make a fabulous Thanksgiving side dish, but it's so simple and nutirious, you can serve it any time of year.

4 C mashed sweet potatoes 3/4 stick (1/2 C stick) butter 1 teaspoon vanilla extract 1 C sugar 1 C milk 1 stick (1/2 C) butter 2 C crushed corn flakes 1/2 C nuts (pecans or walnuts work well)

Serves 8-10 Preheat oven to 400° F. Mix sweet potatoes, 3/4 butter, vanilla, sugar and milk and place in a greased shallow baking dish. Melt 1/2 C butter and mix melted butter with brown sugar, crushed corn flakes and nuts. Spread on top of sweet potatoes mixture and bake for 30 minutes. Serve hot.
