Mild, Medium & Hot Oven Fried Potatoes  

Note from Cheri:
This recipe for oven fries with seasoning blends and dipping sauces was shared with us from the Idaho Potato Commission. Since the potatoes are baked, not fried, they're low in fat and still retain all of potatoes' nutritious benefits.

6 large Idaho Potatoes, scrubbed cooking spray (or better yet, real oil in one of those new handy sprayers!)

Seasoning Blend(s) of choice (follow links for recipes)
Onion Paprika Seasoning
Chili Seasoning
Garlic Pepper Seasoning

Dipping Sauce(s) of Choice (follow links for recipes)
Horseradish Cream Sauce
Puréed Squash & Ginger Sauce Roasted Pepper Herb Sauce
Cheri's Spicy Barbecue Sauce

Serves 6

Preheat oven to 500° F.

Cut potatoes in half lengthwise. Place each potato half, cut-side down, on a cutting board and cut 1/4" lengthwise slices. Place potato slices in a large mixing bowl and toss with desired seasoning mixture or salt and pepper to taste.

Line two baking sheets with foil and spray lightly with oil or cooking spray. Divide the potatoes between the two pans and bake about 10 minutes. Remove from oven and turn potato slices over, return to oven and bake another 10-15 minutes until potatoes are lightly browned and fork tender.
