Super Salsa

When you need a quick recipe that makes a statement, try this salsa. Use it to spread on tortillas before rolling with black beans ad brown rice or chicken strips.

2 C salsa (store bought or follow link for recipe)
1 can (11 oz.) Mexi-corn, drained
1 avocado, peeled and diced
2 tablespoons lemon juice

Makes 3 Cups or 12 (1/4 Cup) Servings

Mix together all ingredients. Chill until ready to use.

Per Serving:
62 Calories; 1g protein; 9g carbohydrate; 2g dietary fiber; 0mg cholesterol; 334mg sodium; 3mg fat.

Diabetic Exchanges:
0.5 vegetable; 0.5 fat
