Two Strawberry Salsas

This recipe by Roxanne E. Chan of Albany, California was a the Grand Prize winning recipe in the 1997 California Strawberry Festival's Berry Off cooking contest.

Salsa I
2 T strawberry preserves
1 cup diced pineapple
1/4 cup chopped dates
1/4 cup diced red bell pepper
1 jalapeño pepper, chopped and seeded
2 T lime juice
1 T olive oil
1 T chopped mint

Salsa II
1 cup diced fresh strawberries
1/4 cup finely diced minced crystallized ginger (get in a gourmet food shop or a well stocked supermarket)
1/4 cup diced green bell peppper
1 minced green onion
2 T orange juice
1 T olive oil 1 T minced cilantro
1/8 tsp. crushed red pepper

Combine all ingredients for salsa I.

Combine all ingredients for salsa II. Serve.
