Pesto

Note from Cheri:
Pesto is an amazingly versatile sauce to have on hand (make lots and freeze it in small containers, for use at a moment's notice). Use it on pasta, over grilled chicken or fish or as a seasoning agent in soups and salads. Pesto has strong flavors, so a little can go a long way.

It's easy to find ready made pesto in stores, but it is rather pricey. Why pay more? It's very simple to make at home if you have a food processor.

2 cups fresh basil leaves
5 medium garlic cloves
1/3 cup grated parmesan cheese
1/3 cup pine nuts or walnuts
2/3 cup extra virgin olive oil salt & pepper to taste

Makes about 3 cups

Combine all ingredients in a food processor and process on high speed till evenly chopped and mixed.
