Herb Wine Marinade  

Note from Cheri:
This versatile marinade can be used with most any kind of food. Use white wine for chicken, fish or vegetables. Use red wine for beef, lamb or even venison. I especially like to use the marinade with food that is going to be grilled over an open flame.

Want to lower the fat and calorie content? use a higher ratio of wine to oil. Don't be afraid to play with the recipe.

3/4 cup red or white (depending on what you're using the marinade on)wine
2/3 cup olive oil
1/3 cup red or white wine vinegar
1 T garlic, minced or pressed
2 T chopped fresh basil
2 tsp. fresh oregano
3-4 sprigs fresh thyme
1 tsp. fresh rosemary

Makes about 2 cups

Mix all ingredients together and use to marinate meats, fish or vegetables.
