Marinated Cauliflower Salad  

Note from Cheri:
This salad makes great picnic food. Make sure to marinate it at least overnight.

4 C cauliflower, cut into small forets
1 C sliced black olives (I like to use kalamatas)
3/4 C chopped green bell pepper 1/2 cup onion, chopped
1/4 C vegetable oil
3 T white wine vinegar
3 T lemon juice
1/2 tsp. salt
1/4 tsp. pepper

Serves 8
Combine cauliflower, olives, pepper and onions. Mix remaining ingredients together well and pour over vegetables, tossing to coat. Cover and chill (or store in a zippered plastic bag) overnight, mixing occasionally.
