Sugar-free, Low Carb
Broccoli Salad

Make up this recipe and feed a crowd, or make it and put it in the refrigerator and eat off it for a couple of days. It is really better the second day. The bacon looks better when added just before serving though.

8 cups flowerets of fresh broccoli
6 scallions, chopped with greens
1 cup sliced mushrooms
5 slices of crisp-fried bacon, crumbled
1 cup chopped walnuts
1 cup mayonnaise
1/4 cup vinegar
1/4 cup powdered malitol (or other no-sugar sweetener -adjust the carbs accordingly)

Makes 8 Servings

Combine broccoli, scallions, and walnuts together in a large bowl. In a separate bowl mix together the mayo, vinegar and sweetener until well blended. Mix the veggies and the dressing together until well coated. Top with crumbled bacon just before serving.

Total carbs = 28
Per serving = 3.5 carbs
