Note
from Cheri:
This recipe comes to us from Vicki and Lee Morgan of
the Bailey House Bed and Breakfast and Tearoom in Dayton,
Tennessee. This historis inn was once the boarding house
home of John Thomas Scopes, of the Scopes Evolution
trial fame. Today, the Bailey house tearoom is a favorite
of locals and tourists alike. Click

of their terrific recipes.
The
better your tomatoes, the better this dish will be.
It's a great combination of sweet with a slight bite
of heat from the cayenne. Use more or less depending
on how hot you like your food. This
salad packs well for picnics.
While the Morgans usually serve this dish as a salad,
I also find the lightly pickled tomatoes, onions and
bell peppers make great sandwich and burger toppings.
