Healthy Coleslaw

Most people don't realize that cabbage is a very nutritious food. Making coleslaw is probably the easiest way to get its cancer fighting properties.

Dressing
1 C non-fat plain yogurt
1/4 C apple cider vinegar
1 tablespoon honey

Slaw
1 lb. (I small head) green cabbage, shredded
1/2 C shredded carrot
1 tablespoon poppy seeds
1/4 C currants or raisins

Makes 8 Servings, 1/2 Cup Each
Prep Time: 20 Minutes

In a large bowl, combine the dressing ingredients. Add the cabbage, carrots and poppy seeds and raisins or currants. Mix well until the dressing completely coats the cabbage.
