Orzo Salad  

Note from Cheri:
Orzo is a tiny pasta that actually looks just like rice. It makes a wonderful base for this pasta salad. I love to take this along on summer picnics at the Hollywood Bowl.

 

2 C orzo pasta
1/2 C olive oil
1/4 C lemon juice
zest of 1 lemon
2 cloves garlic, finely chopped
1 tsp. dried oregano
1 carrot, finely diced
1 bell pepper, finely diced
1 small cucumber, peeled, seeded, and finely diced
2 whole green onions, finely chopped
3 T fresh basil, chopped
1/4 C finely chopped Italian parsley
salt and pepper to taste

Serves 4 to 6.

Cook the pasta according to the package directions. Drain, rinse with cool water, and set aside.

Combine olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper in a small bowl and whisk to combine thoroughly. Combine the cooked pasta, dressing, and remaining ingredients in a large bowl and toss to combine.

Serve warm, at room temperature or slightly chilled.
