Tabouli Salad

Tabouli, a bulgur wheat salad made with fresh lemon juice, parsley, mint and tomatoes, is a healthy food, bursting with flavor. Suzy Hicks shared this recipe with us, along with some other favorite Middle Eastern recipes. Click here for details.

1 cup of bulghur wheat
1 1/2 C boiling water
juice of 2 lemons
1/4 cup olive oil, preferably extra virgin
1 tablespoon or more of chopped fresh mint
about 6 or 7 Roma tomatoes, diced
1 cup of fresh parsley, chopped

Serves 6

Combine bulghur and boiling water, cover and let sit about 15-20 minutes. Mix in remaining ingredients and let this sit at least 4 to 5 hours in refrigerator. Some add cucumber or green onion if desired. Serve with pita bread.
