1 head of Iceberg lettuce chilled and cut into four
equal wedges
1 cup diced cucumber
2 stalks celery, finely chopped
1/2 green bell pepper, finely chopped
6 scallions, finely chopped (including greens)
1 medium tomato, finely diced
1/4 cup fresh cilantro, finely chopped
1 cup mayonnaise
1/2 cup Sugarfree ketchup
1/4 cup lemon juice
1/4 teaspoon Stevia
(or other no-sugar sweetener -adjust the carbs accordingly)
Makes 4 Servings
Chop up the veggies and mix together in a mixing bowl. In another
bowl, blend the mayo, ketchup, lemon juice and sweetener until smooth.
This should be a thick dressing. Pour the dressing over the veggies
and toss together until well coated. Place wedges of lettuce on
salad plates and spoon 1/4 of the veggie/dressing mixture over each
one. Serve cold.
