This roasted tomato bruschetta recipe is a great starter or appetizer, especially when tomatoes are in season.

Ingredients

  • 2 cups grape or cherry tomatoes, halved
  • 3 large cloves garlic, crushed and sliced
  • 1 tablespoon olive oil
  • Kosher salt, generous amount
  • Sea salt, to sprinkle

Directions

  1. Preheat the oven to 425 degrees F.
  2. In a round oven-safe casserole, combine all the ingredients except the sea salt and mix well.
  3. Cook in the preheated oven for 40 minutes. Remove from oven and stir well. Season with salt, then let sit 10 minutes.
  4. To serve: Spoon the bruschetta onto slices of baguette. Top with Parmesan cheese and bake for 10 minutes in a 350 degree F oven. Serve hot.
