This roasted tomato bruschetta recipe is a great starter or appetizer, especially when tomatoes are in season.
Ingredients
- 2 cups grape or cherry tomatoes, halved
- 3 large cloves garlic, crushed and sliced
- 1 tablespoon olive oil
- Kosher salt, generous amount
- Sea salt, to sprinkle
Directions
- Preheat the oven to 425 degrees F.
- In a round oven-safe casserole, combine all the ingredients except the sea salt and mix well.
- Cook in the preheated oven for 40 minutes. Remove from oven and stir well. Season with salt, then let sit 10 minutes.
- To serve: Spoon the bruschetta onto slices of baguette. Top with Parmesan cheese and bake for 10 minutes in a 350 degree F oven. Serve hot.
