Roasted Red Bell Pepper Hummus Recipe

Ingredients

  • 16-ounces chickpeas
  • 1, 16-ounce jar roasted red bell peppers, drained
  • 1/2 jalapeño, seeded and diced
  • 1/4  cup chopped onion
  • 1 tablespoon chopped garlic
  • 3 tablespoons chopped cilantro leaves
  • 1 teaspoon paprika
  • 1 1/2 teaspoon cumin
  • 1/2 teaspoon freshly ground pepper
  • 1 to 2 teaspoons of adobo sauce from can of chipotle peppers (start with 1 teaspoon for a mild flavor, adding more to taste)
  • 1/4  cup olive oil

Directions

  1. Place all , except olive oil, in food processor. Process until puréed and then slowly add the olive oil with the food processor running.
  2. Cool in refrigerator for one hour prior to serving.
  3. Serve with toasted baguette, toasted pita bread, or fresh vegetables.
