Roasted Red Bell Pepper Hummus Recipe
Ingredients
- 16-ounces chickpeas
- 1, 16-ounce jar roasted red bell peppers, drained
- 1/2 jalapeño, seeded and diced
- 1/4 cup chopped onion
- 1 tablespoon chopped garlic
- 3 tablespoons chopped cilantro leaves
- 1 teaspoon paprika
- 1 1/2 teaspoon cumin
- 1/2 teaspoon freshly ground pepper
- 1 to 2 teaspoons of adobo sauce from can of chipotle peppers (start with 1 teaspoon for a mild flavor, adding more to taste)
- 1/4 cup olive oil
Directions
- Place all , except olive oil, in food processor. Process until puréed and then slowly add the olive oil with the food processor running.
- Cool in refrigerator for one hour prior to serving.
- Serve with toasted baguette, toasted pita bread, or fresh vegetables.
