Recipe for Chef Patrick Ponsaty's Red Pepper Puree. This puree is a great utility item to have in your kitchen to add flavor and color to all kinds of dishes.

Ingredients

  • 1 red bell pepper
  • 1 shallot
  • small amount of olive oil
  • 1 cup chicken stock

Directions

  1. Makes About 1 Cup
  2. Heat olive oil in a skillet. Sauté chopped shallot and chopped pepper until soft. Purée with the chicken stock.
