Recipe for Chef Patrick Ponsaty's Red Pepper Puree. This puree is a great utility item to have in your kitchen to add flavor and color to all kinds of dishes.
Ingredients
- 1 red bell pepper
- 1 shallot
- small amount of olive oil
- 1 cup chicken stock
Directions
- Makes About 1 Cup
- Heat olive oil in a skillet. Sauté chopped shallot and chopped pepper until soft. Purée with the chicken stock.
