Poached cinnamon pears

This is an impressive, but easy, recipe for kids with slight supervision.
Ingredients
- 4 medium ripe pears (Bosc or Bartlett) peeled, cored, and quartered lengthwise
- 1/3 cup brown sugar
- 1/4 cup sweet white wine, Riesling or Muscato
- 3/4 cup water
- 1 teaspoon vanilla
- 6 to 8 cinnamon sticks
Directions
- Place pears into a large sauce pan with a lid. In a medium bowl, stir together brown sugar, wine, water, vanilla, and cinnamon sticks. Pour mixture over pears.
- Bring pears to a boil and then reduce heat to low and cook for 5 to 10 minutes. Pierce a pear with a sharp knife to see if it's soft. If not, cook for a few additional minutes. To serve, transfer pears with their liquid to dessert dishes.
- Garnish with mint and raspberries.
