Recipe for Mojo Verde Sauce from Cesar Tapas Bar. It's great on all kinds of meat, potatoes and fish. Store in the fridge but serve at room temperature.

Ingredients

  • 2 bunches cilantro, stems removed
  • 1 large garlic clove, coarsely chopped
  • 2 jalapeño chiles, coarsely chopped
  • 1 1/2 teaspoons salt
  • 2 tablespoons plus 1/4 cup extra virgin olive oil
  • 2 tablespoons cumin seed, toasted and ground
  • juice of 1 lime

Directions

  1. Toss the cilantro leaves, garlic and jalapeños in a medium bowl with 1/2 teaspoon of the salt and 2 tablespoons of the oil. Let stand for 20 minutes.
  2. Place the mixture in a food processor and process to a paste. With the machine running, add the remaining 3/4 cup oil. Mix in the cumin and lime juice. Taste and adjust the seasoning.
  3. Makes About 1 Cup
