Author Notes: Jerked chicken is a classic recipe in Jamaica. While the marinade list of ingredients is long, they are all easy to find. This dish, complete with salsa and marinade goes together in nothing flat with the help of a food processor.
Ingredients: 4 chicken legs

OR

4 chicken breasts

1 recipe Jamaican Jerk marinade (click this link  for recipe)

1 recipe Mango Cilantro Salsa (click this link  for recipe)
Instructions: Coat the chicken with the Jerk Marinade and rub in well. Refrigerate and allow the chicken to marinate overnight or for up to 24 hours.

Remove the chicken from the marinade, shaking off the excess. Grill the chicken over a medium fire until golden. Serve with Mango Cilantro Salsa.
